Chocolate Chip Cookie Ice Cream Cake!

Sunday was my husband’s birthday. Last year I made him a homemade ice cream cake. While I enjoyed making it, the cake ended up being more work than I had originally planned (more expensive too). This year I had planned on making another ice cream cake, but with brownies rather than cake. When Vance saw what I was planning, he requested a chocolate chip cookie ice cream cake instead. So . . . I gave him what he wanted.


This ended up being the easiest cake I have ever made!

To begin, I softened a tub of Edy’s Drumstick Ice Cream. I then spread the ice cream into a cake pan lined with parchment paper and wrapped the cake pan tightly in plastic wrap. While my ice cream layer was freezing, I whipped up my chewy chocolate chip cookie recipe. I was worried one batch wouldn’t be enough for 2 cake pans, but it ended up being the perfect amount 🙂 Once my cookie dough was ready, I divided it into two equal parts and pressed it into 2 cake pans. When the cookies were done baking, I let them rest for 5 minutes before removing them from the cake pans. Once removed, I allowed the cookies to cool on wire racks for 3 hours. I then began building my cake.


The ice cream melts quickly, so you have to assemble the cake fast. After I had my big cookie ice cream sandwich together, I wrapped it multiple times in plastic wrap and topped it with foil to ensure it wouldn’t get freezer burn.


Words cannot describe how delicious this “cake” turned out. It was SO simple and stress free, unlike the ice cream cake I made last year. I may have to start making this just for the heck of it. It’s a good thing we steer clear from sweets 95% of the year.
