Semi-healthy Caramel Apple Egg Rolls.

I don’t know about you, but I cannot get enough of fall — although the weather here in Oklahoma is more winter-like lately.

Today I have a quick, easy, and semi-healthy caramel apple egg roll recipe for you this morning. What better way to make your house smell like fall than by baking up these golden rolls of apple goodness?


Here is what you will need . . .
2 large Washington apples — or whatever apples you prefer
2 packets of Stevia
dash of ground cinnamon
All natural egg roll wrappers — I found mine at Neighborhood Walmart
1 tsp flour to about 1-2 tsp water
2 tbsp all natural coconut oil
2-3 caramel pieces, melted

This recipe yields 6-8 egg rolls, depending on how much you fill each egg roll wrapper.


Start by peeling and dicing your apples into small, bitesize pieces.



Heat 2 tbsp coconut oil over medium heat. Add in diced apples and sprinkled with 2 packets of Stevia. I then added a little cinnamon. How much you wish to use is completely up to you.



Allow the apple mixture to cook for 5-10 minutes, stirring occasionally. You want the apples soft, but not mush.
Remove from heat and allow to cool for 5 minutes.

While your apple mixture is cooling, preheat your oven to 375º F and mix together 1 tsp flour with 1-2 tsp water. You want the flour/water mixture to be on the thicker side, so just add water until you get to this point. I know a lot of people use a whisked egg to seal egg roll wrappers, but I wanted to stay away from egg for this recipe.



Add 2 tbsp apple mixture to 1 egg roll wrapper. If you haven’t made egg rolls before, the wrappers come with instructions on how to wrap them.



Bring in each side then place a small dab of the flour/water mixture at the top corner of the egg roll. Begin to roll from the bottom of the wrapper.



Once you have finished making all of your egg rolls, place the egg rolls on a cookie sheet greased with coconut oil. Add 1 tbsp coconut oil to a small bowl. Using a pastry brush, brush coconut oil on top of each egg roll.

Place your egg rolls in the oven and bake at 375º for 15 minutes, or until egg rolls are golden brown.

While the egg rolls are cooling, place 2-3 cubes of caramel in a microwave safe bowl (I used a coffee mug) and heat for 15 seconds. Stir and heat for an additional 10-15 seconds. Each microwave will be different, so keep an eye on the caramel to ensure it doesn’t burn.

Place the egg rolls on a plate and drizzle with caramel. I’m not a very good caramel drizzler (is that a thing?), but the egg rolls were delicious!



I enjoyed these babies (not all at once) with a hot cup of coffee 🙂 They’d also pair nicely with vanilla ice cream. If you prefer more caramel, you can heat up more caramel pieces and use it to dip the egg rolls in.
