Healthy blueberry banana bread.

Emma and I woke up early this morning and went straight to the kitchen to make this beautiful, healthy blueberry banana bread. No wordy posts from me today. Today is a busy Saturday, preparing for a special Sunday 🙂 And sorry! No fancy pictures either.

Here’s what you’ll need.
1 c all-purpose flour
1 c organic whole wheat flour
2 eggs
1/2 c coconut oil
18 Stevia packets (you can use 1 c granulated sugar if you prefer)
1 tsp vanilla
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
1 c fresh blueberries
3 ripe organic bananas, mashed
raw, crushed walnuts (to put on top of the bread)

Preheat your oven to 350º F. Grease a loaf pan with coconut oil. Coat with a small amount of all-purpose flour to prevent sticking. This makes it easy to remove the loaf once it has cooled.

With a hand mixer, mix together the coconut oil, Stevia, eggs, and vanilla. Next, mix in the baking powder, baking soda, cinnamon, salt, and all-purpose flour. Add the mashed bananas and mix well. Slowly add in the whole wheat flour, mixing just until combined. With a spoon or spatula, fold in the blueberries. Pour the mixture into your greased and floured loaf pan. Top the mixture with crushed raw walnuts.

Finally, bake your bread for 45-60 minutes at 350º F. I checked mine at the 45 minute mark and baked for an additional 5 minutes. Insert a toothpick into your bread. If it comes out clean, your bread is done.
