Sorry it’s been a while! I’ve been insanely busy since my husband returned from deployment and school started back up. I promise I’m going to keep up with this blog as often as I can.
My hubby is at work and I just got our daughter to bed, so I decided to whip up a quick batch of (almost) vegan banana oatmeal cookies to snack on while I study, except I threw in some semi sweet chocolate chips this time.
2 c organic rolled oats
3 ripe bananas, mashed
1 tsp cinnamon
1 tsp vanilla
1 tbs raw honey
1/2 c mini semi sweet chocolate chips
Preheat your oven to 350º
In a medium sized bowl, mash the bananas. Add in the oatmeal, cinnamon, vanilla, and honey.
You can stop here if you’d like. If not, add in 1/2 c mini semi sweet chocolate chips and mix.
Form in to cookies/patties and place on a cookie sheet. There’s no need to grease it. I’m being lazy tonight so I used parchment paper that way I didn’t have another dish to wash when I was finished.
Bake at 350º for 20 minutes. The cookies will feel firm when they’re done baking.
